Here is the recipe for the lf lemon cheesecake for those who have asked...
Put in blender, 2 cups nonfat cottage cheese, 2 tablespoons lemon juice, and one small jello pack (sugar free lemon flavor)dissolved in 1/2 cup boiling water. Blend ingredients until smooth. Add one cup nonfat cool whip and blend again until smooth. Pour mixture into lowfat graham cracker crust (store bought or homemade) Chill for at least 2 hours.
This is a cross between a no bake cheesecake and a mousse. If you want more cheesecake flavor add 8 oz lowfat cream cheese to blender. The recipe is good both ways. It just depends on how many calories you want to add and your taste. When properly chilled it will be very firm and cut easily either way. I usually leave out the cream cheese to save on calories.

I made a lowfat version of lemon cheesecake today. It is really good and only 177 calories per slice. I am on EFS so I can have this kind of snack. It is more than 100 calories but I just do a little more exercise on the days I want a piece.
Today's food:
oatmeal w/half banana
celery sticks w/ 2 tablespoons hummus
protein smoothie
1/2 half organic cliff bar
one cup rice
homemade beef and broccoli
one piece low fat lemon cheesecake
Calories: 1350
Exercise: 30 min kickboxing- 40 min walkfit- 60 min bike
Calories burned: 950

I am on day 3 of my second rotation. All is well with food and exercise. They just started me on a new medication which I am not happy with. It makes me feel sick but I will deal.
Todays food:
2 small oatmeal muffins(these are homemade and low in fat and calories)
20 grapes
protein smoothie
2 cups broccoli w/ 2 tablesppons hummus
kids cliff organic bar
1 1/2 cups chicken w/ 2 cups green beans
teddy grahams
Calories: 1205
Exercise: 50 min kickboxing-40 min walkfit- washed and buffed out my jeep
Calories burned: 930

Down another 3 pounds and that's with angel food cake and ff ice cream on last night's menu. It was my mac mac's birthday. I started back on cycle one of EFS today. My weightloss for first rotation was 8 pounds. This is really good because of how my meds mess with my losses. I have not had a hard time on this plan and have been able to mix it up some and still get these numbers. I plan on doing 3 or 4 rotations in all. Hope everyone is having a wonderful Monday!
