Seems I am so stuck at my current weight after a 40lb loss. Faithfully hitting the gym on my off days and on my work day getting in that extra 3 mile walk... Hoping I see some kind of drop again soon.

Maybe try mixing up your gym routine? I don't know what you are doing now, but throwing in weight training and/or high intensity interval training could get things moving again.

Do a 48 hour water fast. Or even a 24 hour fast. You need to break homeostasis. I fast every day. Most days its 16 fasted and 8 hours for eating. Others I just fast for 24 hours. Im losing a pound a day almost and I eat 2000 calories a day. Sometimes 2500.
Fasting could help you blow through that plateau.
