Last night I took some chicken breasts out of a brine/cure that they had been soaking in for just over a week. I sliced them into strips, seasoned with salt, pepper, garlic, and chopped green onion, then dropped them into a skillet with hot olive oil in it. While those were cooking, I washed a big handful of fresh green beans and then added them to another skillet that had sesame oil heated up in it. When the green beans were almost finished cooking, I tossed in a TBS of sesame seeds so they could brown up a bit. An almost gourmet meal and well within my numbers! Hope everyone has a great weekend! I'll be frying fish, hush puppies, and shrimp for ~50 people!!! That's gonna be a will power test!

(That's one food I didn't think of missing, and now you've got me contemplating keto versions and what kind of fat to fry them in.)

T8U9 I always use coconut oil, won't burn, & has SO many benefits! :) I buy it by the gallon. (Costco).

We'll mix the puppies up from scratch, store bought frozen are terrible, and we haven't found a mix we like yet. The bride uses her grandmother's/aunt's (?) recipe. Jeannie, c'mon down! We eat at 1:30 tomorrow in Sulphur Spings!

I didn't know that frozen hush puppies existed. Anathema! And now there are fruit-flavored hush puppies? Well then. I wish I did not know that. --- Is there a way to keep oil from spattering during frying?
