I went through the freezer Sunday night and pulled out some things I thought needed to be eaten, while I was in there I found a pack of uncooked turkey breast slices that the bride bought me. I had forgotten about them so I tossed them into the frig to defrost.
Last night, I got creative with them and some left over stuff. I laid out each slice, which were around 1/4" thick, then placed 2 slices of prosciutto on each (I cure my own meats), a nice slice of smoked Gouda cheese from snacks over the weekend (I smoke around 15 pounds of cheese each winter), added a couple of slices of left cooked over bacon, and finally some spinach that the bride didn't eat.
I then rolled them up nice and tight, dropped them into some hot olive oil in a skillet, and gently flipped them now and then to cook evenly.
They came out great and we are planning the next batch with some different fillings. It was almost like a cheat meal for me but was well within my WOE for sure!
