This week has been hard in terms of healthy eating. Due to strained finances I was left with $6.25 for food this week. That's less than what I typically spend in a day. I've still got vegetables in my freezer, but not much else.
$6.25 does not allow for much, so I bought the poverty staples: milk, 2 minute noodles, popcorn and multigrain bread. The 2 minute noodles are my main meal (I've been adding veg to make them "gourmet noodles"), and they are dangerously unhealthy-linked to diabetes, heart disease and a bunch of other scary stuff (I read it in a journal article years ago), but they are all I can afford right now.
So any reduction in weight this past week is a miracle.
Poverty is something I'm very familiar with; I grew up very poor, was poor for most of my adult life up until 2014 when I got a qualification and a good job. This coming week I'll use the $5 I found in an unused handbag to get me through.
My current situation is temporary, I'll be okay after my next payday, but I'm reminded of how hard it can be to eat healthy on a small budget. Yes, seasonal fresh food can be cheap, but $5 of fruit and veg will not suffice for 7 days/21 meals, even if it were soups.
Just sharing this as food for thought 💚

When I was poor, I used to get a box of old dodgy fruit and vegetables from my local fruit and veg shop for $2. Most were imperfect stuff that no one would buy, and some were going bad,but I would go straight home, cut all the bad bits out and cook up a big pot of pasta sauce, a big curry and a pot of fruit puree. Now that I think of it, it was probably the most healthy eating period of my life. If you can tighten your belt so to speak and make to next pay day, that's great, but if you really get stuck, ask around at small businesses when they're not too busy (supermarkets tend not to for insurance purposes, but they chuck out a lot!). Bakeries are worth a shot too! All they can say is no. Good luck 🍀

Better off to try some Dhall or lentil recipes. Served with brown rice or quinoa.

Thanks for the support and suggestions folks! I used to go to my local market before they closed for the week to pick up cheap boxes of fruitnveg-since it's been so long i forgot about that option! I live in a different area now, but there is a market within walking distance that I've never been to, so when i get paid next week I'll check it out. Regarding the suggestion of dhal also a great idea, but I don't have a single ingredient and a small bag of brown rice is $2.49, so half my budget! But when i do have cash again, I'll be stocking up on a few things so I don't go through this again. Lesson learned!
