Feeling better this morning. Was probably only UP (awake) about 7 hours yesterday, and then I got a full night's sleep (10 hours). I was able to eat breakfast this morning, and it ddoesn't seem to be bothering my stomach, praise the Lord!
I posted a great recipe for "Loaded Baked 'Potatoes'" yesterday, both in my Journal and in the Daily Accountability 2020-#32 Challenge Forum. I was very surprised by how it doesn't taste like cauliflower at all. With only 3.2 Net Carbs, it's a great replacement for actual potatoes. It sorta tastes like Cracker Barrel's Hash Brown Casserole. I left some of the cauliflower pieces a little larger, and it gives it a great texture in your mouth. You should try it, if for no other reason than how wonderful it makes your kitchen smell when you're cooking it!
