Well, I did not make my goal of 250 by Mothers Day, but I have crossed the 30 lb threshold. I’m going to shoot for 245 by the 9th of June. I had to wear my suit today to the funeral of a fellow pastor who died from a bout with pancreatic cancer, and this time my coat buttons did not pose a missile hazard. Although I have stayed entirely away from sweets, I did not do as well this past couple of weeks in consuming more veggies. I think had I eaten more veggies, my portion control with fish and chicken would have been better. I have found that protein substitutes for red meat do not necessarily equate to a lower caloric intake; I still have to exercise discipline. Toodles!

I’m apparently not very good at the picture uploads yet, but I think I outdid my culinary self with this smoothie. It is delicious. I blended 1 cup of unsweetened almond milk, 6 oz HyVee Lite Vanilla yogurt, 1 cup of frozen blueberries (Walmart), 1 frozen banana, 1/2 cup of ice. Only 120 calories plus whatever the banana and blueberries are; probably about 300 calories all together. You gotta try this. Toodles!

Since I like all of these ingredients, I thought I would just throw sauté them all together and see what comes out: Red bell peppers, onions, jalapeño, minced garlic, all purpose seasoning, and light red kidney beans. Totally vegan and tastes pretty good too. I’ve always been a fan of kidney beans - good source of protein. Toodles!

Boy, this weight thing is sure putting up a fight; but I am still winning. Last night, I kind of binged and ate about a cup of whole wheat tortilla chips, dipping them in a white cheese sauce. I felt kind of guilty, but that went away when I weighed in at 1.4 pounds lighter this morning. Yay, a breakthrough! Been back to usin the Total Gym now for 3 days; I think it may have helped kick this thing up a notch. Toodles!

My own version of a skillet breakfast: 3 eggs, jalapeño and green bell peppers, onions, bacon bits, and a little cheddar cheese. My experiment was worth repeating; I think I’ll do it again some Sunday morning. It was yummy! Toodles!
