First time didn't work? It seem like a great idea, though it looks like the bird is zombie like without the head.

Northern, 1st try with this recipe but 2nd attempt posting the pic. Might change it to Zombie Chicken. The recipe said 50-60 minutes and I went 75. Crispy and delicious but below the pan level, not as crispy as above. Like someone earlier said, more like steamed. I think if I didn't cram so many peppers and potatoes in, more of it would have browned. Next time, smaller potatoes, not so many. Potatoes in first so the bird is propped up higher. All in all, a success!
