WHOOOOWEEEE
Highest calorie day in a while. I made eggplant Parmesan, and there aint nuthin' healthy about that sucker.Sure, egg plant tomatoes and even a layer of Zuchinni (my twist) but there's a lot of cheese and fried goodness in there too. Just super yum and decadent is all! The family loves it and I love making it with ingredients from my garden.
I kept the portion to 1 and ate a lot of salad, and I got a good bit of exercise today as well.() A splurge well worth the enjoyment my family seems to get from this dish! (ya, I kinda LOVE it too!!)
Erly on I would not have made or eaten this dish, but I have really learned balance and control here. Its good to be good and fun to reward oneself too. I have to do it that way, and so far so good!

You can make the dish healthier by baking the eggplant at a high heat to make the breading crispy and when you put it together it's so good (instead of frying). I also use part skim cheese. My family can't tell the difference. But good for you for the portion control. If we ate like that all the time, we wouldn't gain weight.
