A healthier take on my pasta salad. Was really good! This was made with whole wheat pasta, instead of the rainbow rotini I usually use. Lots of fiber rich veggies and garbanzo beans. Drizzled with light Italian dressing. I did end up sprinkling some grated Parmesan cheese on it since I omitted cheese cubes. I really miss cheese!😩
