My recipe for you, Wifey!! 4 portions. Except for the lentils and the water, the other quantities are approximate, adjust to your taste.
400g pardina lentils (or other lentils that do not require pre-soaking), rinsed;
100g or 1/2-1 red onion, diced;
60g or 1 medium carrot, diced;
150g or 1/2 bell pepper (red, green or mixed), diced;
2 cloves garlic, minced;
1 bay leaf;
Salt;
Pepper;
1 teaspoon (or more) smoked paprika
800 ml water or broth;
Put everything together in the bowl of the slow cooker except the paprika (I like to add it once the cooking is finished). Program 4 hours on high. Once cooking is finished, dilute the paprika and let the stew stand.
