Oh wow I never thought of using a tortilla as a base, will have to try that next time, thanks for the tip! Oh yes mimosa would be perfect! I had a glass of Chardonnay while I was making it as I usually like to have a glass of wine when I’m making something on the weekend. Account for it in my calories for sure 😁

I bet the tortilla would also help with clean up too since even though I spray the glass pan with non stick, I still have to bust out the SOS pad to really scrub it clean 😓
