This huge bowl of spaghetti with tomato & pumpkin was only 320 calories. Was so so delicious and hearty 🧡
I used a combo of zucchini boodles and cauliflower spaghetti and the cooked the baby tomatoes with half an onion (no oil) and boiled the pumpkin 🍝

Pumpkin baked in the oven (with like 5ml of oil) with sweetener is one of my favorite side dishes. Pumpkin is so overlooked 😆
