Good Day All!
I made a breakfast this morning I was not really happy with. I always loved poached eggs when I was a kid. I made two and put them on 1/4 toasted flatout. Boy was that nasty! The flatout was like warm cardboard. Memo to self...they are much better when used for a sandwich. The eggs were watery even though I drained them with a slotted spoon on paper towel just like my mom used to do. I think what the problem was that I used to have them on buttered toast which soaked up all the juices and the yoke. I think I will leave the poached egg idea b behind as a childhood memory and go back to my scrambled eggs or omelet!
Oh well, dinner will be so much better...baked salmon!

Sorry your breakfast was so unpleasant. ugh. warm cardboard. lol. I can't say I eat eggs anymore...bad experience cooking them when I was about 10 or so. Haven't been able to eat just eggs since then. Mmmm baked Salmon sound delicious!! We decided to make chicken soup over rice for dinner since the weather is so dreary today.

Babs, too bad about breakfast. I've not tried poached eggs until recently. Growing up I would always have whole eggs either sunny side up of over easy. I found something in Cooking Light about a month ago that is best of both your breakfast and Dinner. Alas I did not publish it because of the issues with the "waiting approval" function...Have a nice day!!

I made a sandwich with flatout this morning except I used the whole thing and used Egg Beaters, a slice of turkey and lite swiss then rolled it up. I didn't toast it but I did put it back in the pan for a minute with the lid on to let it warm through all the way. It was really good! I like poached eggs too, I used to make them a lot. I heart salmon, I made some on the grill the other night. What time is supper? :O)

mmmm warmed up cardboard.. my favorite! lol crappy deal about the breakfast being a fail, but you tried it, you know it didn't work and now you can move on to something new and still have the good child hood memories!

Ok... the salmon for dinner truly made up for the nasty breakfast. To top it off, I made a few extra ounces to have with my SCRAMBLED eggs tomorrow :)
