Lol - true the name is an oxymoron but I see that a lot with vegan recipes. I guess it makes it easier to find a vegan version of a traditionally meat based product. In any case, this dish was delicious and the left overs were my lunch today. I wish I had more for tomorrow but I’m too lazy to make it 2 days in a row. 🤣
