Thanks! Yes it’s all homemade - I made the curry and my husband made the samosas. For the curry - 1 large can pumpkin puré, 2 can chickpeas, 1 can green chili, 4 cups of coconut milk, 5 golden potatoes, 2 onions, 3 cloves of garlic, and a bunch of seasonings that I honestly didn’t measure including some saffron. I toasted the seasoning in a little oil and then added the garlic and onion until slightly translucent. Add potatoes, pumpkin, and coconut milk. Cook until the potatoes are tender. You can add a dash of sesame oil and nutritional yeast if your feeling like them. Top with cilantro and a pinch of saffron. Since my husband made the samosas, I don’t have a recipe.

You could also do 3 large sweet potatoes instead of golden potatoes or cubed squash.
