So I am still feeling tired. I'm thinking about cutting back on my carbs and going gluten free in some things (like my bread and pasta). I feel this might be a good way for me to cut back on my intake of carbs, as I consume way too much of it.

I have been doing a lot of googling on gluten free food and found heaps that I want to try. Just need to buy a few ingredients I don't have in the pantry.

Be careful going gluten free if not needed can cause heaps of problems and even lead to intolerance

Cutting back on carbs good idea. Have you done an RDI plan to lose weight? I found cutting out bread, rice, pasta, fat milk makes huge difference.
