Hi Lynette, just like an omelette but then it goes under a hot grill in the pan. Particularly good if you want to use lots of veg which can make it hard to flip an omelette or for it to cook through. This one I fried a few lardons (no added fat) then added the mushrooms, then red pepper, spring onion and chilli and got that all nice and browned before adding the eggs. Sprinkle of cheese on top then just a few mins under the grill. You can use anything, leftover cooked veg also works well.
