Creative Saturday breakfast; took two of my healthy pumpkin muffins, sliced in three slices each, dunked in egg substitute, and made pumpkin french toast. Making again tomorrow for my partner with pumpkin cream (pumpkin butter mixed with nonfat plain greek yogurt). Yum!

Off to Zumba now! It's a gorgeous fall day & I'm going to enjoy every minute of it. Making a crock pot split pea & ham soup for dinner. Life is good!

Neptunebch, I wish you could have come to Zumba with me; it was awesome! The substitute instructor included some kick-boxing moves and the tango just before cool-down. This 50 year-old has never danced the tango, and we did the moves slowly enough that before long I felt like Rene Russo in The Thomas Crown Affair, if you know what I mean. ;o)

Thanks for the recipe idea. I have some healthy carrot cake oat bran muffins in the freezer. I think I'll try that for breakfast today.
