Hi Donna
There’s no recipe really. I just tossed some things in a pan to see how it would come out.
Here’s what I did. Hope it works for you.
1 cup sliced zucchini
1cup cubed egg plant
1 tbsp olive oil
Herbs of your choice seasoned to taste (I used a tsp clubhouse veg seasoning and a dash of garlic)
Sauté until edges brown slightly
1 cup cubed portobello mushroom
Add to pan and sauté another few minutes untill mushrooms cook through.
Add 1/2 cup cooked spaghetti and three cherry tomatoes, halved.
Toss pasta with veggies over low heat untill completely coated.
Serve with greated parmigiana.
